Why you should eat legumes

L is for Legumes

What are legumes and why are they so good for us?!⠀

Legumes are a class of bean, pea or seed with 2 halves such as chickpeas, lentils, kidney beans, peanuts, navy beans, butter beans, peas, soybeans and tamarind. ⠀

⠀Why should we eat more? They are a source of fibre that have been shown in studies to reduce our risk of colon cancer when we consume a small amount daily. They feed the good bacteria in our guts and contain plant chemicals which have other benefits to human health. ⠀

Tinned legumes are cheap and convenient to use, it’s so easy to throw a can into soups. I made curried parsnip and chickpea soup with a drizzle of garlic oil, all low FODMAP for those who need it, check it out on my Instagram feed.
