J is for Jackfruit

Jackfruit is a great vegan alternative to meat. We should all be looking to increase our intake of plant foods, not only for our gut health but for the health of the environment too!

For gut health the more fibre rich plant foods we eat the better, eating a different type of fruit of vegetable each week is a great way of feeding different good colonies of bacteria in our microbiome.

Jackfruit Indian Curry

Ingredients for 2:

·         1 tsp coconut oil

·         ½ tsp cumin seeds

·         ½ tsp mustard seeds

·         2 bay leaves

·         2 dried red chillis

·         1 small chopped onion

·         4 cloves chopped garlic

·         I inch chopped garlic

·         1 tsp coriander powder

·         ½ tsp turmeric

·         1 can chopped tomatoes

·         1 can jackfruit

·         1.5 cups water

·         Rice to serve

·         Coconut yoghurt to serve

·         Fresh coriander to serve

 

Instructions:

1.       Heat oil in a large pan, when hot add cumin and mustard seeds until they start to pop for 1 minute, add the bay leaves and chillies, cook for 1 minute. Add the onion, garlic and ginger with a pinch of salt. Cook until translucent for 5-6 minutes stirring occasionally.

2.       Add coriander, turmeric and black pepper. Miss well then add the tomatoes, salt and jackfruit. Mix, cover and cook for 15 minutes.

3.       Uncover and cook for a few minutes and shred the jackfruit up slightly.

4.       Add water, cover and cook for 15 minutes. Reduce heat and taste, add extra spice if needed, cook for a further 10 minutes. Serve with rice, coconut yoghurt and coriander (fresh).
